Recipe: Chocolate & Chia seed protein balls

Protein balls are my number one go-to snack when I need a quick pick-me-up or sweet snack between meals, and these are made to energize and fuel the body. Feel free to add any additional ingredients into these too.. I recently bought peanut butter powder from the shops and am loving adding it into smoothies and protein balls for a nuttier taste or sometimes I add in cacao nibs for extra texture…so get experimenting and be creative, you really can’t go wrong :)!

You Need:

1/2 chocolate whey protein *up to you if it’s flavoured or unflavoured protein
1/4 coconut flour or almond meal
2 tbsp. cacao powder
1 tbsp. chia seeds
2 tbsp. desiccated coconut *plus leftover for rolling
3 tbsp. rice malt syrup
3-4 tbsp. water

Makes approx. 7- 10 balls

To Make:

1. Combine all of the dry ingredients into a bowl and stir together.

2. In a heat proof bowl, heat the syrup in the microwave until warm and runny (about 20 secs). Pour into the dry mix with 2 tbsp. of water. Use you hands to knead the mixture together. You dont want it to be to dry that it crumbles when you roll them into bite size balls nor too runny that you cant either. Depending on the feel of the mixture, you might need to add more moisture in which case, slowly add more water until the mixture feels just right.

3. Use your hands to roll the mixture into bite size balls, coat in dessicated coconut and place in the fridge.
